Prepare to embark on a flavor journey with the 8 Wired Grand Cru (2011), a captivating sour and wild beer from the renowned Renaissance Brewing. This Belgian-style quadrupel has been meticulously aged for 16 months in Pinot Noir barrels, allowing the natural yeasts and bacteria to work their magic. The beer's origins can be traced back to the Sultan, a previous batch that was left to ferment in those oak barrels, gradually developing a delightful sourness. To further enhance the funky character, the brewers blended in two barrels of a Flanders-style red ale, which had also been fermenting for around 18 months. The result is a complex and intriguing beer that boasts an impressive 11.0% alcohol by volume. Expect a harmonious blend of tart, fruity, and earthy notes, with a subtle oak influence from the Pinot Noir barrels. This beer is a true testament to the art of blending and the patience of the brewers.
